In 1981, the year that Sarabeth opened her first bakery/café, she sent one of her bakers to buy a few cloves of garlic for a new tomato soup she was working on. Unbeknownst to Sarabeth, the assistant bought shallots instead of garlic and sliced them up for the soup. Not wanting to waste the purchase, Sarabeth decided to try the shallots instead. It turned out that the shallots added that special extra flavor she was looking for. One day, Sarabeth decided to add some grated light cheddar cheese to the soup; she tasted it, and, voilą, it added just that perfect touch to finish the soup and make it truly extraordinary and a legend was born. It is served exactly that way in every one of Sarabeth’s restaurants to this day. Over the years, tales of the incredible tomato soup at Sarabeth’s abounded. Newspapers and magazines sounded its praises, customers told their friends and its popularity spread. A visit to Sarabeth’s was not complete until you tried the Velvety Cream of Tomato Soup. Although many customers and food magazines clamored and cajoled for the recipe, Sarabeth stubbornly refused to reveal it. Now, at last, after 28 years, and much experimentation, Sarabeth has been able to reproduce the exact same soup and make it available to the public. Under the supervision of Sarabeth, it is being produced in a pristine, HAACP approved plant to be distributed frozen.
Sarabeth’s Legendary Velvety Cream of Tomato Soup is shipped frozen, in 24 oz. microwaveable plastic containers, packed 3 per insulated carton. Dependant upon weather conditions, the soup may arrive semi-frozen. If so, you can store the soup in your freezer for up to one year. Or you can store the soup in the refrigerator, where it is best consumed within 50 days.
