Streusel:
- In a small bowl, combine flour, sugars, and cinnamon.
- In another bowl, combine melted butter and vanilla.
- Gradually stir the butter mixture into the flour mixture.
- Squeeze the mixture with your hands until thoroughly combined.
- Crumble the mixture in a bowl to form crumbs.
Pie:
- Using your favorite pie dough recipe, roll out the dough to 1/8" thickness on a lightly floured work surface. Roll the dough to a 14" diameter. Fit the dough into a greased and floured 9" pie pan, pressing it evenly into the corners and letting the excess dough hang over the sides.
- Place the filling into the shell, piling it above the edge of the pie pan.
- Pleat the pastry over the filling, and lightly press it closed. The center of the filling should be exposed.
- Lightly egg wash the top of the pie, and sprinkle the streusel on top. Use plenty of streusel, the more the better.
- Place pie on a sheet tray in a pre-heated 350 degree oven, and bake for 45-60 minutes until golden. Test the apples with a cake tester to be sure they are tender.

Filling:
6 granny smith apples, peeled, cored and sliced
1 cup sugar
1/3 cup sarabeth's cranberry relish
1/2 cup fresh or frozen chopped cranberries
1/2 cup cream
2 tbs. flour
1/2 tsp. lemon zest
1/2 tsp. cinnamon
mix all ingredients together in a mixing bowl
Streusel Topping:
1 cup unbleached flour
6 tbs. unsalted butter, melted
3 tbs. sugar
3 tbs. brown sugar
1/2 tsp. vanilla
1/8 tsp. cinnamon
