Christmas Cranberry-Apple Pie

Serves: 6-8
Preparation time: 25 minutes
Cooking time: 45-60 minutes

Streusel:

  1. In a small bowl, combine flour, sugars, and cinnamon.
  2. In another bowl, combine melted butter and vanilla.
  3. Gradually stir the butter mixture into the flour mixture.
  4. Squeeze the mixture with your hands until thoroughly combined.
  5. Crumble the mixture in a bowl to form crumbs.

Pie:

  • Using your favorite pie dough recipe, roll out the dough to 1/8" thickness on a lightly floured work surface. Roll the dough to a 14" diameter. Fit the dough into a greased and floured 9" pie pan, pressing it evenly into the corners and letting the excess dough hang over the sides.
  • Place the filling into the shell, piling it above the edge of the pie pan.
  • Pleat the pastry over the filling, and lightly press it closed. The center of the filling should be exposed.
  • Lightly egg wash the top of the pie, and sprinkle the streusel on top. Use plenty of streusel, the more the better.
  • Place pie on a sheet tray in a pre-heated 350 degree oven, and bake for 45-60 minutes until golden. Test the apples with a cake tester to be sure they are tender.

Ingredients

Featuring Sarabeth's Cranberry Relish

Filling:
6 granny smith apples, peeled, cored and sliced
1 cup sugar
1/3 cup sarabeth's cranberry relish
1/2 cup fresh or frozen chopped cranberries
1/2 cup cream
2 tbs. flour
1/2 tsp. lemon zest
1/2 tsp. cinnamon
mix all ingredients together in a mixing bowl

Streusel Topping:
1 cup unbleached flour
6 tbs. unsalted butter, melted
3 tbs. sugar
3 tbs. brown sugar
1/2 tsp. vanilla
1/8 tsp. cinnamon
